  • 1 tablespoon white vinegar

Step 1: Gather the supplies you need first, as described above.

Step 2: Puree the onion, garlic, mace, paprika, mustard seed, marjoram, and coriander in a food processor. Incorporate the milk, egg white, sugar, salt, and pepper. Transfer to a bowl and reserve.

Step 3: One at a time, grind the pork, beef, and fat cubes through the fine blade of a meat grinder. Together, grind the three components.  

Step 4: Use your hands to thoroughly blend the pureed ingredients with the meat in a large basin. Use cold water to wet your hands to avoid the mixture sticking.
